Pin holes in Chocolate shells?
I made hand crafted chocolate shells with Dark Chocolate. with one brand chocolate the shells are released fast, shining & no pin holes with another brand the shell release time is more, shining ok but with pin holes. The temperature of melting, cooling & vibration is same. What could be the reason and how to avoid pin holes?
The brand with the pinholes needs to be stirred more while melting to mix it more completely. Be careful not to stir to vigorously because you don`t want to whip air into it just stir constantly and try again. If same happens then don`t use that brand again. Not all chocolate is the same quality so using one that works saves time and money. Good luck.
